* you can do this in a mixing bowl if you prefer that over the counter top method.
Ingredients
- 2 cups semolina flour
- 2 eggs
- 3 yolks
- 2 tsp dulse powder
Instructions
- Combine the flour and dulse flakes in a mound on a clean surface*, make sure they’re mixed well before adding the liquids
- Create a well in the center of the mound
- Crack the eggs and yolks into the center well
- From the center of the well, whisk the eggs and flour together, gradually utilizing more and more of the flour from the edge of the well until all has been combined
- Knead with your hands for a couple minutes
- Once all flour has been incorporated, make a ball out of the dough and cover tightly in plastic wrap. Let it sit at room temperature for an hour.
- Separate the dough into 3 equal balls. For each ball (one at a time), flatten into a rectangle and run through the widest setting of the pasta roller. (You may need to dust with flour to prevent sticking.)
- Fold the rectangle in half and run it through again, do that twice.
- Adjust the pasta roller to the next thinnest setting and run the rectangle through again, continue doing this while adjusting to the next thinner setting until you have reached the thinness of noodle you prefer.
- Cut the pasta as you’d like, with a knife or pasta cutter. Dust with flour to prevent noodles from sticking together.
- Boil water, then add noodles and cook for about 3 minutes.
- Add preferred pasta sauce, or seaweed butter for that extra umami!
